Gluten-Free Cabbage “Noodles”

I used to hate eating cabbage, unless it was in the form of kimchi. I LOVE kimchi!

One day our Taiwanese-American friends came over to cook our family dinner and they walked in with a ginormous cabbage. The cabbages here are huge and are quite heavy to carry home from the store!img_0499

Our friend taught me how to make Chicken Lo Mein that night and he made a side of fried cabbage. I was reluctant to try the cabbage, but to be polite I took a bite…and I was hooked!

It was so yummy!

And then I had a revelation… I actually like cabbage…I just hate BOILED cabbage! For over a year, our family thoroughly enjoyed that Chicken Lo Mein recipe with cabbage.

But over the past few months our family has gone gluten-free, so no more Lo Mein noodles for us. A few weeks ago, I decided to revive the noodles by making cabbage “noodles” instead. Here is how I do it:

  1. Wash the cabbage and slice into thin strips.img_0639

2. Heat your pan on high, add some oil, throw in a minced clove of garlic, salt, pepper, and stir fry the cabbage.img_0638

3. Add some cooked gluten-free marinated chicken or whatever else (that is gluten-free) that you prefer on top and you now have a gluten-free meal! Enjoy!img_0643
